Pesto Salmon Parcels

Quick and easy dinner that is rich in good fats, veggies and can be served either by itself or with some potatoes or rice to make it a heartier meal.


All you need for this recipe is a fillet of salmon, some healthy pesto sauce from a jar (or make it from scratch like me) and an oven!


Serves: 2 people

Time: 35 minutes including prep


INGREDIENTS:

  • 2 x salmon fillets

  • Bunch of broccolini

  • 1 x punnet of cherry tomatoes

  • 3 tbs of pesto sauce (recipe below)

  • Salt to taste

Pesto sauce:

  • 1 cup fresh basil

  • 1.5 tbs pine nuts

  • 1-2 garlic cloves

  • 1 tbs lemon juice

  • 2 tbs nutritional yeast

  • 1/4 tsp salt

  • 1.5 tbs virgin olive oil

  • 2-3 tbs water

METHOD:

  1. Preheat the oven to 180C. If making the pesto sauce from scratch, simply place all ingredients in a blender and blend until smooth.

  2. Cut two pieces of baking paper, roughly 30cm long. On each piece of baking paper, place 1 piece of salmon in the middle, and surround it with your veggies. Spread the pesto sauce on the top of the salmon and enclose the salmon by bringing both sides of the baking paper together and folding/ scrunching it so it resembles a little parcel.

  3. Place the 2 parcels in the oven for 25-30 minutes, and then serve with a side of rice or a salad to make it a heartier meal. Sprinkle with a pinch of salt and chilli flakes if you desire.
