Healthy Twix Bars

These healthy twin bars might look a little time consuming, but I promise they are not. With wholesome ingredients, these bars are naturally gluten free, refined sugar free, dairy free & vegan.

For this recipe all you need is...


INGREDIENTS:

For the base

  • 1 1/2 cups of almond meal

  • 3 tbs melted coconut oil

  • 2 tbs pure maple syrup

  • 1 tsp vanilla extract

  • 1/4 tsp salt

For the caramel layer

  • 2/3 cup almond butter

  • 1/3 cup pure maple syrup

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

  • 1/4 tsp salt

For the top layer

  • 3/4 cup dark chocolate*

  • 1 tbs coconut oil


METHOD:

  1. Preheat the oven to 160C (320F)

  2. Combine the base ingredients in a bowl until a thick crumb texture is formed. Then transfer to a lined baking pan that is roughly 20cmx20cm, pressing it evenly into the pan

  3. Bake for 10 minutes and allow to cool.

  4. Place the caramel layer ingredients in a small pot and heat until the coconut oil has melted and it has just began to bubble slightly. Remove from the heat and poor onto the cooled base in the baking pan. Place this is the freezer for 20 minutes or the fridge for 45 minutes.

  5. To top it off, simply melt the chocolate with the coconut oil, and poor onto of your cooled caramel layer. Allow the chocolate to set in the fridge/ freezer and use a warm knife to slice it. Store them in the fridge for up to 1 week otherwise keep them in your freezer for a frozen dessert!

*To instead make your own chocolate layer simply:

- Melt 1/2 cup of coconut oil in a pot

- Add 1/2 cup maple syrup when coconut oil is melted

- Take off the heat and add 3/4-1 cup of cacao powder, add to your desired thickness.
