Apple Crumble Muffins

Gluten free + Vegan


This recipe made 6 muffins, and the team here at the clinic gobbled them up pretty dang quick 😋



Ingredients:

• 1/3 banana, mashed

• 1/4 cup oil (coconut or olive)

• 1/2 cup apple sauce

• 3/4 cup of coconut sugar

• 1/2 tsp salt

• 1+1/2 tsp baking soda

• 1/2 tsp cinnamon

• 1/2 cup water

• 1 cup chopped apple

• 1/2 cup almond meal

• 1 + 2/3 cups of GF flour


Topping ingredients:

• 1/4 cup coconut sugar

• 1/4 cup GF oats (or almond meal)

• 1 tsp cinnamon


Method:

1. Preheat the oven to 160C

2. Mix all of the wet ingredients together (banana, oil, apple sauce, water)

3. Mix all of the dry ingredients (coconut sugar, salt, baking soda, cinnamon, almond meal and GF flour) together in a bowl

4. Mix the wet ingredients into the dry ingredients and stir until well combined, then finally fold in the chopped raw apples.

5. Then mix the topping ingredients together in a bowl

6. Finally, pour the muffin mixture into a lined muffin pan, and top the muffins with the topping mixture, and then bake for 20-25 minutes!
